Taco Tuesday! On a Friday because I like to party like that.
I’ve been craving chili but it’s still 90 degrees in East TN so that’s not happening. (although when I finally posted this the temp was below 70….whatever, now I guess next post will be chili hahaha). I think what I was craving didn’t have to be chili, just something with chili type ingredients and texture. Am I the only one who does that? Come on, seriously. Other people have those type cravings right?
When I make something like chili, taco filling, soup, anything that is going to use a pound or more hamburger/chicken/soy crumbles I’m going to make a big batch and then either drive my family crazy by making it 8 different ways or freeze some. Or both. This Turkey Taco Filling recipe made enough for our family of currently three adults (we get a new kid after the wedding in Dec) to have tacos two nights, taco salads for my lunch two days, a Taco Turkey Egg Mug…and I still have some for the freezer!
This super easy filling starter is easy to make, freezes well and is so versatile. Now that I think about it, what I put in the freezer may be soup when it does finally cool off some (note to self: make soup!). It is a combination of turkey and meatless crumbles but shhhhh, your family will never suspect a thing.
Turkey Taco Filling – 3 Weight Watchers Points Plus per 1/2 cup serving (recipe makes approximately 6 cups / approximately 12 servings)
Note: this is the taco filling ONLY, remember to count the points of anything you add or put this on!
Ingredients:
- 1 lb Ground Turkey Breast
- 8 oz (approximately half the bag) Simple Truth or similar Meatless Crumble
- 1 3/4 cup (one can) Organic Black Beans
- 1 can Rotel
- 1 pkt Hidden Valley Ranch dry
- 1 pkt Old El Paso Taco Seasoning
- 1 tbsp (or more!) diced jalapeno
Add Rotel and ground turkey in a non stick skillet (you may have to use a little non stick spray if you purchased 90% or more lean), brown and then gently “grind” with a potato masher. Add meatless crumbles and black beans and stir. Add both seasoning packets and jalapeno, stir thoroughly and bring to a low simmer. Allow to simmer for an additional 5-6 minutes.
Serve immediately in Turkey Tacos or allow to cool for freezing, Turkey Taco Salad or Turkey Taco Egg Mugs. Enjoy and please share pictures of your own creations!
