It’s Super Bowl Sunday and even though this year’s event will be a party of one, I’m still trying to keep the rest of the day under control. I live downtown. There’s always a party just a short walk away!
Hubby had to make an extended leg (or two) on this trip and has flown to three states in two days. His Uber driver in state 1 was a retired businessman who drives to support his golf habit in Florida. Let’s just say they had quite the conversation. Uber driver number two did not have high aspirations and just wanted to unfold the mystery of the new additions to the Big Mac family. John now has a detailed knowledge of the inner workings of these fast food delicacies and I have a hankering to consume one. Thanks a lot Uber dude.
I knew with the game coming up in a few hours I’d better not give in and go. So I made one instead.
Turkey Mac: 7 Weight Watchers Smart Points
Ingredients:
- Trader Joe’s Turkey Burger
- Joseph Pita (or other 1 SP Pita)
- 1 slice Velveeta Original
- 2 pickle Slices
- Shredded lettuce
For Mac Sauce
- 1 Tbsp lite Thousand Island
- 1/2 tsp Truvia Baking Blend
- 1/2 Tbsp sweet relish
- 1/2 tsp white vinegar
- Light sprinkle salt to taste
- 1 tsp diced onions (optional)
I used my air fryer to prepare the burger. 14 minutes on 360. You can also cook in a skillet according to package directions. Add cheese while still warm. Heat the pita slightly in the oven, remove and add the burger with cheese. Mix Mac Sauce ingredients and drizzle evenly over the top. Top with shredded lettuce and pickle slices. McD would be jealous!
