TJ’s Five Below Club:  Mushroom Asparagus Egg Mug – 3 Weight Watchers Smart Points

It’s always fun to be part of a club no matter what the even is, adventure will be, who the people are.  I’ve been an ad hock member of our high school French Club, President of my daughter’s Nap Club, now I’ve got a Five Below Club.  I love being part of an “association or organizations dedicated to a particular interest or activity”.

I find it interesting that they chose Orlando in this example.  I mean Disney is my favorite destination and all but this is a totally different club.  It’s my Five Below Club.

Five ingredients or less.  We can do this.


TJ’s Five Below Club:  Mushroom Asparagus Egg Mug – 3 Weight Watchers Smart Points

Ingredients:

  • 1 Trader Joe’s Cage Free Egg (or similar)
  • 1/8 cup Trader Joe’s Cage Free 100% Liquid Egg Whites (or similar)
  • 1/8 cup Trader Joe’s Fat Free Ricotta (or similar)
  • 1/2 cup Trader Joe’s Asparagus Saute (or chopped asparagus, mushrooms and onions)
  • 1/4 cup sliced Trader Joe’s Portabella Mushrooms


Spray mug, muffin cooker or crock bowl with non stick spray. Add everything but the egg, egg whites to the bowl and cook in microwave on high for 30 seconds

Crack open egg and add to bowl along with egg whites, stirring gently but evenly into the other ingredients.

Return to microwave for 2 minutes on high. PLEASE NOTE! The added moisture in this one may require extra time so continue microwaving if necessary in 30 second increments on high until the entire thing is “set” all the way through (no runny bits if you gently lift with a fork and check). If you have a low wattage microwave or the mixture is still “loose” continue to microwave in 20 second increments until everything is firm but not hard. Let sit for one minute before trying to remove from bowl to move to bread or plate. The egg “muffin” should slide out easily. Use your imagination, these are a delicious and quick filling breakfast…enjoy!
