Can’t believe it, hubby liked this one so much he has asked for it to stay in the lineup! AND he gave me a couple of ideas for other variations he would like to try. There is hope hahaha!Thai Peanut Lettuce Wrap – 11PPV
4 servings, 2 wraps per serving
Ingredients:
- Washburn Mills Quinoa & Grain Blend Thai Peanut 1 bag of mix, 1 seasoning pouch
- 2 tbsp peanut butter
- 1 tbsp vegetable oil
- Cooking spray
- 1 bag Gardein Home Style Beefless Tips
- 16 romaine lettuce stalks
Using Thai peanut mix, seasoning pouch, peanut butter and vegetable oil prepare per instructions on box. In a separate skillet coated with cooking spray sauté the Beefless tips on medium-high for approximately 5 minutes then cut in half and sauté one more minute. Add quinoa Thai peanut mix to skillet with Beefless tips and stir until mixed thoroughly.
Layer two romaine lettuce stalks for each wrap and place two on each plate. Divide mixture by four and each of those in two. Add each of the 8 sections to each romaine wrap and serve immediately. Enjoy!
