We spent Chat #184 discussing foods with benefits – meaning, foods that do something for us as we eat them. So, for all of those days where you feel like you might not be incredibly in control of what you’re eating it’s important to have good, beneficial meals that you can prepare quickly and easily.
I got the idea for this bowl after seeing Casey have a delicious looking power bowl from Taco Bell and knew I had to make a version “with benefits.”
What do I mean by that? The ingredients in this recipe serve your body well by creating instant gratification results like keeping you hydrated, reducing swelling by cutting sodium, adding fiber to fight sluggishness, and more!
Note: You’ll notice that my version is vegan. Personally, I’m not vegan or vegetarian but I don’t eat a ton of meat so I love to use meatless options in these recipes! Feel free to replace the meatless crumbles with your protein of choice.
Taco Tuesday Power Bowl
Yield 1 bowl
Ingredients
- ½ cup meatless crumbles with no salt Dak’s Taco Knight spice to reduce swelling
- 1 cup shredded lettuce for hydration
- ½ cup tomatoes for water retention and hydration
- ½ cup pineapple salsa for fiber and hydration
- ¼ cup black beans for fiber and to fight sluggishness
- ¼ cup corn for more fiber
- Cheese wontons for fun! (recipe coming soon)
Instructions
- Add meatless crumbles, tomatoes, black beans, corn, pineapple salsa, and shredded lettuce to a large, shallow bowl - making sure to keep each ingredient in its own separate pile
- Top with a few cheese wontons (wonton wrappers topped with nutritional yeast and vegan cheese, cooked in the air fryer at 350 for 5 mins)
- Mix it up and enjoy!
