I’m going to go ahead and brag a little. These got a 5 out of 5 from the civilians who tasted them. Three of the “volunteers” are previous taste testers and went in knowing this was Weight Watchers friendly and that if I didn’t like them they wouldn’t be coerced into a nibble. Two of them however were skeptical. Really not sure what to say. But I stood there unwavering and said “do you like strawberry shortcake? Try one”. They each ate two.
Tuesday is Valentine’s Day and I wanted something sweet but simple. These hit the spot.
Sweet Hearts: 2 Weight Watchers Smart Points per serving (3 servings / 2 SP each)
Ingredients:
- 1 Joseph’s Lavash (or similar 1 SP flatbread)
- 3 Tbsp Strawberry Fluff
- 2 tsp Truvia Baking Blend
- 1 Tbsp Jell-O Sugar Free Raspberry
- Coconut non stick spray
Heat oven to 325 degrees. Using a pizza cutter cut the Lavash into 12 strips approximately 1″ wide.
Using a piping bag and a round tip lightly “pipe” the strawberry fluff in stripes on each Lavash strip.
Starting at the ends roll towards center until they meet. Pick up and pinch the center to make a heart shape.
Place each heart in a mini muffin cup and spray lightly with coconut non stick spray.
Mix the Truvia and Jell-O powder together and sprinkle evenly over each one
Bake for 5 minutes and remove from oven. Allow to cool for at least 5 minutes and use a spoon to gently pop them out and on to a plate to continue cooling. Some fluff will ooze out the bottom….if you are a good spooner you will get all of it!
