My garden is overflowing with strawberries this year, so I’m taking the opportunity to make some delicious treats for myself, my family, my friends, and really anyone who will take some because I have far more than I can consume on my own.
One of the recipes I’ll be making and that I’m excited to share with you is a single-serve strawberry shortcake that’s built off of the WW classic, 3-2-1 mug cake. With just a few simple ingredients and a few moments of your time, you’ll have a delicious seasonal treat that won’t blow your points budget!
Strawberry Shortcake Mug Cake

Yield 1 mug cake
Ingredients
- 16 oz. (1 box) angel food cake mix
- 16 oz. (1 box) sugar-free yellow cake mix
- Water
- Fresh berries
- (optional) Whipped topping of choice
Instructions
- Pour both bags of cake mix into a large zipper-closure bag and knead gently until mixed.
- For the perfect mug cake, spray a mug or glass jar with nonstick spray.
- Add 3 tbsp cake mix and 2 tbsp of water to your mug. Mix well.
- Cook in the microwave for 50-60 seconds on high depending on your microwave. Cake will have a spongy consistency when finished.
- Eat warm with your favorite toppings or allow to cool and add berries or peaches and whipped topping.
Notes
This is so easy to make there is no reason to make the cakes ahead. Store the mix in a cool dry place until ready to use. Don’t want yellow cake? Add your favorite flavor to the base mix (just remember to calculate the points if it’s not sugar free)
