Sometimes you just need peanut butter…

I made a new friend at my Weight Watchers meeting tonight.  Her name is Carly and she  has a smile that could warm even the Grinch’s cold heart.  This young lady loves to sing the National Anthem at her brother’s go cart races, obviously loves her mom even though she embarrasses her on a regular basis (but what mom doesn’t embarrass their teenage daughter?) and seems a little nervous that she’s going to have to spend her days eating her entire Points Plus Value in grapes.  Her brother was quick to tell mom today “Carly ate chips for her snack instead of grapes like you told her!”   Don’t you just love the food police?  Especially when it it comes in the form of an irritating 11 year old little brother.  

I asked Carly what her favorite snack was besides chips and she glanced towards her mom and with a big smile announced “well I do like peanut butter and banana sandwiches!”  This isn’t a pb&b Carly but if you like peanut butter as much as I do you will love these fun and easy to eat snacks.  Just remember to tell little brother hands off….this is diet food and he can’t have any!

Apple PB Sandwiches – 1 serving 7PPV

Ingredients:

  • 1 firm Apple (I prefer honey crisp)
  • 2 tbsp Smart Balance Chunky Peanut Butter
  • 1/4 cup Nature Valley Coconut Chia Granola

Core apple and then slice into 6 pieces to make rings.  Lay three of the rings flat on a plate and pat the surface dry with a paper towel.  Place peanut butter in a microwave safe dish and heat on 50% power for about 30 seconds.  Stir pb and if it’s not quite to a honey consistency continue to microwave for another 30 seconds.  Peanut butter should be thin enough to spread easily on the apple with a knife.  Continue onto all three pieces and then sprinkle with the granola.  Top with the remaining 3 apple slices and voila, a smart snack that is sure to please any girl that loves her PB!
