One of the gals from our IYHAE Facebook Group shared this recipe from Delish and I couldn't help but Weight Watcherfy it.  The video is mesmerizing...all that cheesy oooey goodness..but on cauliflower instead of potatoes.  Ok, I'm in..let's do it!

Ingredients

Loaded Smashed Cauliflower:  2 Weight Watchers Freestyle Smart Points per serving (approximately 8 servings)

  • Nonstick cooking spray
  • 1/2 large head of cauliflower, cut into florets (about 2 cups)
  • 3 Tbsp Nutritional Yeast
  • 2 tsp seasoning of choice (I used Dak's Spices Everything But Da Salt)
  • 1 cup Trader Joes Light Shredded Mozarella Cheese (or similar)
  • 1/2 cup Kirkland Crumbled bacon (or similar)
  • optional fat free sour cream or non fat plain greek yogurt
  • optional chives or other garnish

Instructions

Wash and pat dry cauliflower, cut into approximately 24 florets. Bring 2 quarts of water to a boil, add florets and boil for approximately 5-6 minutes or under tender (not mushy, just tender).

Preheat oven to 425 degrees. Place florets on a parchment paper lined cookie sheet.  Smash with a potato masher.  If you don't have one...get one!  I also use this for separating ground meat or to help shred cooked chicken.

Spray lightly with non stick spray and evenly sprinkle on cheese, seasoning, nutritional yeast and bacon bits.

Bake for approximately 10 minutes and the broil for an additional 5 minutes.  Keep an eye on them, you don't want to burn these beauties!

Add any optional garnish and enjoy.  We have reheated for two days and they are still delicious!
