My daughter is getting married in less than four months. While going to school. And working two jobs. She’s a pretty amazing kid.
That amazing kid and my soon to be amazing son in law love to eat. They have willingly tried everything I have created, good or bad. All of Nana’s vegan experiments no matter what. The soon to be couple has even started stretching their culinary wings and trying to come up with some creations that are their own. But time is not on their side. School, work, pending nuptuals…there isn’t much time for planning much less cooking.
So my daughter Casey took matters into her own hands and decided to make some simple solutions. Solutions to the “let’s grab a burger”, “pick up a pizza”, “looks like it’s going to be a sandwich tonight” dilemma but they had to be simple. So she created a section for my blog called “Simple Solutions” simple recipes for busy families that are still amazing. Like my daughter.
Simple Solutions, B.O.P. Cheese (Bacon, Onions and Pepper Jack Cheese) – 8 Weight Watchers Points Plus Value
Ingredients:
- 2 slices Whole Wheat bread
- 2 slices Pepperjack singles 2% milk
- 1 tbsp crumbled real bacon bits
- 1 1/2 tbsp mesquite bacon flavored crispy onions (salad topper)
- Smart Balance non stick spray
Spray one side of each bread slice with Smart Balance spray. Lay one slice sprayed side down on a parchment paper lined cookie sheet. Add one slice of pepper jack, evenly sprinkle bacon bits and crispy onions. Cover with other slice of cheese and top with the other bread slice sprayed side up. Preheat oven to 350 and “toast” for 5 minutes or until top bread slice begins to brown.
Tada, that’s it. So simple! And after a late Friday night in the showroom it was certainly a solution. Let us know how you like them!
