Guess what happens when you are within the “10 days until the wedding” mark? Yep. Dump Soup to the rescue.
Last night my baby girl finally cornered me for some undisturbed time with final wedding planning. She’s ready, I’m excited for her…there is just an awfully lot to do with Christmas, wedding, New Years, vacation bam bam bam. Know what I mean? And this was one of my last opportunities to have a home cooked meal with just the three of us. What to do, what to do.
Remember how I said it was uninterrupted wedding planning time? Well…I forgot to mention that we also had to get employee gifts and some stocking stuffers taken care of as well. So what to do became WHAT TO DO?? Simple enough, let’s put a dump soup on the stove, walk to Mast General (since we do live downtown now *joy*) and the soup should be ready when we get back. Good thing I already had chicken and stock ready for the other ingredient dumping huh?
Savory Chicken Dump Soup – 3 Weight Watchers Smart Points per serving (approximately 12 servings / 1 cup each)
Ingredients:
- 1 pound (approx 3-4) raw skinless boneless chicken thighs
- 1 pkg Trader Joe’s frozen Multigrain Blend with Vegetables (if you don’t have a TJ’s first of all bless your heart. Second find another frozen mix with some similar combo to this: cooked grain barley, corn, spelt [wheat], whole rice ermes variety [red], whole rice ribe variety, whole rice-venus variety [black], salt), peas, carrots, water, zucchini, vinegar, extra virgin olive oil, onion, sugar, salt, pepper and totaling no more than 17 SP for the entire bag
- 2 cups (one small package) shredded cabbage
- 1 cup (one small carton fresh or one can) sliced mushrooms any type
- 6 cups water
- 2 tsp dry italian seasoning
This first part I prep ahead and have on hand in the freezer for easy dumping. If you are anxious to try this right away though there is no need to wait! Just plan a little extra time so your family and friends don’t pass out smelling all that yumminess while they stalk you in the kitchen with empty bowls in hand. Add all of the chicken and 1/2 the water to a tall stock pot. Bring everything to a boil for 10 minutes. Reduce to a heavy simmer (not boiling, but bubbling vigorously) and cover loosely with aluminum foil. Let simmer for approximately an hour. Remove one thigh and test with a meat thermometer. If the internal temp is not at least 150 (you want 165 when everything is done!) return and continue simmering for 15 minute intervals until chicken is completely done. If you are making this for prep, remove from heat and allow to cool. Pull chicken apart with two forks to shred or use a hand mixer to “shred” (I haven’t used the hand mixer method but I want to try it!). Return to the broth you have just made and then transfer all to a freezer safe container. If you are using immediately return everything to the stock pot and go to the next step.
——>> This is the next step 🙂 With your stock and shredded chicken in the stock pot, next dump all of the remaining ingredients and stir. Bring back up to a low boil for 10 minutes, then reduce heat and simmer for 30-45 minutes. We were back from the Christmas shopping just in time to eat!
I usually make enough to save some in the freezer for quick heat up. This is one of those soups that gets better every time you heat it up!

Your blog is great! I was hopeful you could recommend a ww leader in asheville that understand being a vegetarian. I am considering trying ww again but am very concerned about vegetarian issue. I went to one meeting and they talked about meat proteins the entire time. still trying to figure this out….
Denise I’m so happy you are here! I will see what I can find out for you. The new plan is very much about healthy lean protein to make sure those of us who consume meat are including it instead of what used to be lower point processed junk. My mother is vegan and I eat with her a lot. Are you on Insta or Pinterest? My daughter just got married yesterday so I’m a little behind updating the meatless categories but you can follow them on either one both under @ifyouhaveanegg. The Pinterest board might be the easiest and the category is Vegetarian/Vegan or Meatless Monday. I also have a meatless Facebook support group if you want to join us. Oh my- thank you for taking the time to respond the morning after the wedding! My daughter was married this past March so I know how exhausting it can be. I will look up those boards and groups you mentioned. Have fun on your trip!
