With the Thanksgiving and Christmas holidays upon us I’ve been getting all warm and fuzzy and thinking of strange things I am thankful for. First, I am thankful that I still live in a country where I can say Christmas on my blog and no one can stop me. I know that sounds silly and when we look back on this no one will even remember the Starbucks red cup ridiculousness or even why it appears in this post. None the less, I am thankful. Christmas. There, I said it. Other thankful thoughts that keep popping into the front of my brain are those of new and improved methods of weight watching…I mean seriously, would I have ever had a chance to reach goal and become a lifetime Weight Watcher last year at this time if it hadn’t been for e-tools? And social media support groups? And easier and much more efficient ways to calculate points for recipes and eating out? And then there are my fellow food bloggers who calculate points…bless you. I have consumed more unusual food items and combinations of food items than I would have ever imagined and it’s all because of you.
With all the warm fuzzies still buzzing I decided I should share some of those other blog recipes that I have tested myself, pass or fail, and checked the points for myself. Not that I don’t trust you, but seeing is believing right?
The first recipe for my new “Put it to the Test” series is from my favorite food blogger Kate of Drizzle Me Skinny. Kate is my favorite not because of fancy recipes or professional staging. These recipes are real. I can make them. You can make them. The only issues I’ve ever had with a Kate recipe was finding “real” marshmallow Fluff which apparently was a big deal according to one of my other groups. Calm down, I found the Fluff.
The Drizzle Me Skinny Apple S’more Rings were the first recipe I tested from Kate’s phone app and I was sold. This app is so ridiculously easy to follow and the entire ingredient list is in your hand at a moment’s notice for impromptu stops at the grocery. Why believe me? Drizzle Me Skinny Apple S’more Rings – 5 Weight Watchers Smart Points Value (2PPV)
Ingredients:
- 1 large apple, cored and sliced into rings (I used a honey crisp because I am an apple snob)
- 2 Tbsp marshmallow fluff, melted (I was told to find “real fluff” so I hunted until I found it haha)
- 1 square 70% Lindt dark chocolate, or similar, melted (I used Ghiradelli melting chocolate wafers)
- 1 tsp crushed graham cracker crumbs (I crushed mine in a zip lock baggie and then promptly forgot to use them…see naked s’more apple pic)
Melt your chocolate in the microwave for 35 second intervals, turning after each time, set aside.
Melt your marshmallow fluff in the microwave for approximately 20-25 second, it will expand. (ok, let me interject here…when she says “it will expand” she’s not kidding. The container I used was way too small so my first try looked like Mount Vesuvius. Luckily I was standing there watching the carnage and grabbed it before it went all over the microwave. The next time I put it in a 1 cup glass measuring cup so a) I could watch the fun and b) it didn’t become a white sticky volcanic eruption again)
As soon as you take the fluff out of the microwave spread it onto your 4 apple rings (this was oddly easier than I imagined it would be…what magic properties does the microwave have with fluff??)
Sprinkle the graham crumbs on top of the fluff, then using a spoon drizzle your chocolate onto the apples
That’s it! You’re done. I ate them all immediately…I mean like once I got started I could not stop. But it really didn’t matter because this was only 5 Smart Points. Now let’s see how I did.
I give this recipe 5 eggs! It was easy to follow, ingredients were readily available (after I found “real” fluff), they turned out exactly like I thought they would, anyone could make this. I can’t wait to review more of Kate’s recipes so I have to *cough* make them and *cough* taste test them.
