It’s starting to feel like fall here in East Tennessee and that can mean only one thing – pumpkin spice season is upon us!
If you’ve been following my journey, you know that I’ve recently switched to WW My Way Purple in an attempt to get my eating habits back in check. And since one of the biggest challenges for me is finding time during the day to eat my meals, I’m finding new ways to prepare point-friendly foods that I can eat quickly!
This week I’m making overnight oats so I have a quick and easy breakfast I can eat on the go. And of course, to get in the seasonal spirit, they’re pumpkin spice flavored!
Pumpkin Spice Overnight Oats (Half Pint)

Yield 1 half pint serving
Green 4 SP | Blue 4 SP | Purple 1 SP
Note: Shown served with a handful of Lily’s White Chocolate Chips which are not included in point values listed. If you add these to your overnight oats, be sure to count the points for them!
Ingredients
- ⅓ cup unsweetened almond/coconut milk blend (or “milk” of your choice)
- ⅓ cup uncooked old fashioned oats (note: only use old fashioned, NOT QUICK OATS for best results)
- 1 tsp chia seeds
- 2 tbsp canned pumpkin
- ½ tsp DAK’s Pumpkin Spice
- 2 tbsp nonfat plain Greek yogurt
- 1 oz Jordan's Skinny Syrups sugar-free pumpkin caramel syrup
Instructions
- Add all ingredients to a half pint glass mason jar
- Stir until blended
- Refrigerated overnight (or at least for an hour)
- Serve cold or heat and enjoy!
