(Updated to the new Weight Watchers Smart points program 03/25/16)
Yeah….my daughter named this one. When I asked her what I should name this recipe she said “I know you’re gonna get mad at me but I’m willing to risk it. Pretty Jam Good Spicy Meatballs”. I fussed. Then I giggled. Pretty Jam good it is. And they are.
So you all know I have a tiny obsession with my Rainforest Slaw (click here). It’s more of a love affair actually. It’s probably not a healthy relationship emotionally but it’s so good I don’t care. For our family reunion this weekend I made a double batch and kept some of it at home. What? Don’t judge me, you’ve done the same or you wouldn’t be here with the rest of us Weight Watchering now would you?
Back to the amaze-slaw and what it has to do with meatballs. At the reunion I accidentally got a tiny bit of a bbq’d rib in my slaw. Oh. My. Gosh. That’s all I could think of the next day…bbq and the slaw. The slaw and bbq. I had to have it again and the slaw was already made and sitting in the fridge. Have I already mentioned how good it is?
So I was scrounging through the freezer and found a bag of Trader Joe’s Meatless Balls but I didn’t have any bbq sauce. And to be honest, I’ve never tried to make it. I looked in the fridge. I scoured the pantry. What did I have that even resembled bbq? Nothing. Everything. It has to be sweet, I’d like a little kick, it has to stick to the “meat”balls. And then it hit me! (Gals and guys, this is so easy I talked my husband through how to assemble it in the crockpot while I was still at work!)
Pretty Jam Good Spicy Crockpot “Meat”balls – 6 Weight Watchers Smart Points (6PPV) per serving (5 servings)
Ingredients:
- 1 bag frozen TJ’s Meatless Meatballs
- 1/8 cup room temp water
- 1/4 cup ketchup
- 1/4 cup grape jelly
- 1/8 cup Frank’s Red Hot Sauce
The hardest part of this recipe is remembering to turn the crockpot on low AND plug it in. I probably asked my husband three times it he had plugged it in. He had been up working 30+ hours and was trying to go to bed so he was not amused…..take one bag of still frozen TJ Meatless Balls and dump them in a crockpot.
In a small bowl or measuring glass bowl with handle combine water, ketchup, grape jelly and Franks. Stir until completely mixed. Pour this mixture over the meatless balls and put on the lid. Are you ready for this next part? Pay close attention. Plug in the crockpot AND turn it on low. Not or…and. Trust me, we’ve found out the hard way after a long day at work and expecting a warm dinner that this is a very important use of the term and. Cook on low 4-6 hours stirring gently at 4 hours if someone happens to be home. Holds well as long as you don’t stir too much. Makes approximately 5 servings if you can stop “testing”. Of course I served these with the Rainforest Slaw….droooool. What a great combo, Enjoy!
