I found the most sinful granola at Trader Joes on Sunday. I was tired from being up all night driving from vacation so obviously I was in a weakened state and can’t be held responsible for my actions. Well now it’s Tuesday and while I have two good night’s sleep I can’t stop eating it. I actually had to go ahead and measure out 1/4 cup servings and put them in zippered sandwich bags and clearly mark them with Smart Points. The food isn’t bad, my old habits are. New habits can be a good thing.
With all of my little bags tagged I have to make a conscious decision to open one. Old me would have just stood there with an open box and a glass of milk and not remembered anything but that bottom of the container staring back at me when I regained my senses. New planner me was looking for ways to best savor each little bag so that it complimented what I paired it with and success happened.
During that same Trader Joe’s adventure my sister talked me into a bag of yummy new apples that I had never seen before. Pacific Rose…anyone else had them? They were so yummy I went back for a second bag.
PB & Maple Baked Apple Crisp – 7 Weight Watchers Smart Points
Ingredients:
- 1 Apple
- 1 Tbsp Smart Balance Chunky Peanut Butter (or equivalent PB at 3SP per Tbsp)
- 1/8 cup Trader Joe’s Just the Clusters Maple Pecan Granola Cereal
- 2 Tbsp light whipped topping
- Cooking spray
- 1 Tbsp water
Core apple and place in a microwave and oven safe bowl or crock sprayed with cooking spray. Add water to bowl. Place bowl/crock and apple in microwave and cook on high for 3 minutes. Remove carefully from microwave. Add peanut butter to center of apple pushing all the way down. Sprinkle the granola evenly over apple and peanut butter. Spray all again lightly with cooking spray. Cover loosely with aluminum foil and place on a cookie sheet. Preheat oven to 425 degrees. Place aluminum foil covered apple in oven and bake for 15 minutes. Carefully remove when done and uncover. With an oven mitt transfer oven safe bowl/crock to an oven safe plate. Add light whipped topping and just try to wait long enough to take a bite so that you don’t burn your tongue. I dare you.
