The addition of Turmeric gives this "egg" salad it's classic yellow color and just a touch of extra flavor. Follow Your Heart Vegenaise is creamy, delicious, everything you would look for in a mayo type salad dressing and blends so well with the tofu that the texture is perfect!
approximately 1 Tbsp finely chopped flat leaf parsley
Instructions
Drain tofu and place in large bowl. Using your hands (clean hands!) "crumble" tofu gently until you have even crumbles and no big lumps
Combine Vegenaise, spices and mustard in a separate bowl to form dressing and set aside
Combine remaining ingredients and lightly toss until mixed
Fold in dressing and gently stir until everything is coated
Ready to eat immediately, but the flavors "blend" if stored covered in the fridge overnight before served. Must be consumed within 3-5 days of opening tofu package

Tofu is a great meat replacement and can be fun! Just like you wouldn't crack open an egg and eat it unprepared, find a creative recipe to bring flavor and amazing textures to your tofu. Best used within 3-5 days of opening the package.
