Friends have said I have an obsession with egg mugs…I would take that personally but after reading the definition I think it may be true. I literally eat them at least 3 or 4 times a week and I’ve never met a trial and error ingredient that didn’t work out. It’s weird how obsessions just work out that way…they allow you to become fixated, preoccupied, infatuated, yes even addicted.
This is hands down my favorite Egg Mug Recipe! I have several egg mug recipes that I’ve borrowed, tweaked or turned into mine. This is just one of many!

Mediterranean Egg Mug – 3 WW Smart Points
Ingredients:
- One farm fresh egg
- 1 Tbsp Trader Joe’s Fat Free crumbled Feta cheese (if you don’t like Feta sub the Laughing Cow Light Swiss wedge like in my other recipes)
- Diced Mushrooms (I prefer baby bellas)
- Banana pepper rings
- 3 large olives (I try to use Kalamata but black or green work well too)
- Fresh kale and/or baby spinach
- Fresh ground black pepper
- Olive oil non stick spray
Spray mug, muffin cooker or crock bowl with non stick spray. Add everything but the egg and cook in microwave on high for 30 seconds
Crack open egg and add to bowl stirring gently but evenly into the other ingredients.
Return to microwave for 2 minutes on high. If you have a low wattage microwave or the mixture is still “loose” continue to microwave in 20 second increments until everything is firm but not hard. Add fresh black pepper. Let sit for one minute before trying to remove from bowl to move to bread or plate. The egg “muffin” should slide out easily. Use your imagination, these are a delicious and quick filling breakfast…enjoy!
