Wow this one was so good I literally think I could have eaten a gallon of it. Let’s put it this way, it was so good I have already prepped it for lunch the next two days! The recipe is for the base salad and then some options for yummy add ins. Today I added the avocado, the prepped lunches have the Mediterranean grilled chicken added.
Mediterranean Cucumber Salad – 4 Weight Watchers Smart Points (2PPV)
Ingredients:
- 1 cup spiralized cucumber (I used English cukes)
- 1/2 cup diced colorful tomatoes
- 2 tbsp Hannah Greek Style Tzatziki yogurt dip or similar (Available at Costco)
- 2 tbsp That Pickle Guy Muffalata Olive Salad or similar (available at Costco)
- Plus 1/4 avocado – add 3 SP (2PPV)
- Plus 1/4 of a cob fresh corn – add 1 SP (2PPV)
- Plus 2 skewers West End Mediterranean Greek Style Chicken skewers or similar – add 3 SP (4PPV) (available at Costco)
- Use your imagination!
Spiralize 1/2 one English cucumber
Dice and add some colorful tomatoes or other veggies
Add the Tzatziki and olive salad
Mix together gently and enjoy!
