These little yummies were so good I haven’t come up with a name yet!  (So I’m having a contest to name them, see details below!)


Friends in all social media were blowing up feeds with a new bacon s’more sandwich that was gonna blow all my points.  And your points.  And her points.  But I wanted it.  I mean bacon.  And s’mores.  It was genius.


But I couldn’t make one…I’d just eat it.  And I know me.  If it was really as good as it looks I’d eat another.  And another.

What’s a bacon lover to do?  Let’s just say you shouldn’t ever tell me I “can’t” do something 🙂


Hello, My Name Is…?  (12 servings, 1 Smart Point each)


Ingredients

  • 6 Tbsp Fluff
  • 6 squares Ghiradelli Extra Dark Chocolate (85% cocoa)
  • 24 Goldfish Grahams
  • 6 Tbsp Kirkland Crumbled Bacon (or similar)
  • Coconut or similar non stick spray

Preheat oven to 350 degrees.  Place 12 mini cupcake wrappers in a mini muffin tin and spray with non stick spray.

Add 1/2 Tbsp Fluff to each wrapper.  Top with 1/2 Tbsp Crumbled bacon.  Break each chocolate square into half, then break in half again.  Add two pieces of broken chocolate (1/2 a square) to each one and poke down into Fluff.  Add two Goldfish Grahams and place in oven.  Bake for 8-10 minutes or until Fluff stops expanding.

Let cool several hours or overnight if you want them firm and easier to eat.  If you don’t mind messy let them cool about 15-20 minutes….just be warned you may have trouble controlling your “licker” hahaha!
