Guest Recipe: Windstar Karen's Buffalo Chicken Dip - 1 WW Freestyle Smart Point
If you didn't see our epic Super Bowl Live Chat a couple of weeks ago you've go to go back and watch it. The recipe excitement was electric...you could feel it in the air...ok maybe that was Justin Timberlake's tribute to Prince during the halftime show but I'm still taking credit for it.

Guest recipes are the best! But they're even better when they come from a friend. I met Windstar Karen over 20 years ago through a mutual love of scrapbooking. Several roadtrips and mountain retreats later we have managed to stay in pretty close touch. But when Karen joined the ranks of WW I was super excited...we have a common bond again! Imagine how excited I was when she shared this recipe with our group, who says you have to suffer when your weight loss buddies share great ideas like this?
Ingredients
Windstar Karen's Buffalo Chicken Dip (I rolled them up in low fat crescents and baked for a delicious Super Bowl treat!)
- Buffalo Chicken Dip¼ C = 1 serving (1 FSP) per serving
- 8 oz fat free cream cheese softened
- ¼ C fat free ranch dressing
- ¼ C fat free plain greek yogurt
- ½ C velveeta shreds cheddar cheese
- ½ C Pete’s wing sauce (I used ¼ C which was enough heat for me). Use as much as you want,it doesn’t change the points
- 2 15 oz cans 98% fat free chicken breast, drained.
Instructions
In a microwave safe bowl combine all the ingredients except the chicken, stir until combined. Add the chicken and stir. Microwave for 3 minutes stirring ½ way through.
