There is nothing better on college game day than pizza, am I right? Unless it’s fresh, individual, yummy, pizzas made the way you like it. And the way you like it. And…the way you like it. With a packet of pitas, a little imagination, and a handful of ingredients we came up with some clever (and delicious) combinations.
And I don’t know many fans, football or not, who wouldn’t enjoy the crazy yummy combo of a chick’n tender, pesto, pancetta and mozzarella.
For this combo I had a little diced pancetta left from egg mugs and a new package of Trader Joe’s Chickenless Crispy Tenders. I also had a little of my Vegan Pesto recipe left from another recipe. And of course I always have what has been dubbed my “cheese drawer” stocked with individually packaged mozzarella cheese.
Chick’N Pesto Game Day Pizzas – 9 Weight Watchers Points Plus
Ingredients:
- 1 Trader Joe’s Original Pita Bread Pocket (or other pita or flatbread at 3PP or less)
- 1 Trader Joe’s Chickenless Crispy Tender cooked according to package directions
- 1 tsp diced Pancetta
- 1 oz fresh mozzarella
- 1 serving Vegan Pesto
- Non stick cooking spray
Place pita on a parchment paper lined cookie sheet and spray with non stick spray. Add all ingredients evenly and bake in oven preheated to 375 for 12-15 minutes or until bottom of pita starts to brown. Switch to broil for 3-5 minutes until cheese starts bubbling. Remove from oven and try to wait until it cools before you grab a bite!
