Fried Fish Reuben Cupcakes – 6 Weight Watchers Points Plus per serving

More main dish cupcakes!   

We’ve been talking about sauerkraut and my sister, the actual dessert cupcake queen, reminded me how good it is for your gut.  When I eat things like sauerkraut, yogurt, other tummy taming ingredients I sleep better, my tummy complains less, and I am certain the little smiley digestive bunnies in my belly are holding hands and dancing in little digestive bunny circles.  

Digestive bunnies like sauerkraut.  My husband loves Reubens.  Reubens are made with sauerkraut.  Ergo, I should make Reubens.  Except I didn’t have anything else you make a Reuben with. No corned beef.  No rye bread. No Russian dressing.  What did I have?  I had this. 
  

Fried Fish Reuben Cupcakes – 6 Weight Watchers Points Plus per serving (makes 3 servings – 2 cupcakes per serving)


Ingredients:

  • 12 Nasoya Wonton Wrappers
  • 1 Gortons Smart & Crunchy Breaded Fish Fillet
  • 3/4 cup Sauerkraut drained
  • 1 slice (3/4 oz) Yarlsberg Lite Cheese
  • Smart Balance Cooking Spray

Russian dressing ingredients:

  • 1/4 cup Smart Balance Light Mayo
  • 1 tbsp Mrs Renfros Mild Chow Chow
  • 1 tbsp low sodium ketchup

Mix the Russian dressing ingredients in a small bowl and set aside. 

   


Bake the fish fillet according to package directions

  
  

Lightly spray 6 regular sized muffin tins with non stick spray. Place one wonton wrapper in each cup and gently press into bottom to form the bottom “crust”. Spoon approximately 1/2 tbsp sauerkraut into each wrapper and top with a light spoonful of the Russian dressing. 

    

 Carefully place a second won ton wrapper on top of this mixture turned so that the points alternate and press down gently. Add another 1/2 tbsp of sauerkraut and the remaining russian dressing to each one. Chop the baked fish fillet into small pieces and divide evenly among the 6 wonton filled muffin cups.  Divide cheese slice evenly and place on top. 

  
Preheat oven to 375. Bake cupcakes for 15-18 minutes or until won tons just start to get crispy and cheese begins to melt. Remove from oven and allow to sit for about 5 minutes to allow won ton to cool enough to maintain its shape. These are pretty stinking good so try not to cram the whole thing in your mouth at one time. At least not with witnesses any way.  My husband has declared these “the best”.  For this week anyway!
