Fresh Peach Berry Cobbler – 5PPV

When I rounded the corner into the produce section at Costco this week I was immediately greeted with the enticing and unmistakeable aroma of fresh ripe peaches.  My first thought was “how do people in Georgia keep from gnawing their arms off smelling that all day during season?”.  It’s a smell you don’t forget and why would you want to?  

Did I buy any?  Um hello…does a Big Mac stick to your thighs faster than you can make it out of the drive thru?  I bought an entire flat of those fragrant fuzzy fruits.   And then made these. 

Fresh Peach Berry Cobbler – 5PPV per serving

Ingredients for 2 individual cobblers

  • 1 fresh ripe peach
  • 1/2 cup fresh blackberries
  • 1/2 cup Self Rising Wheat flour
  • 1/2 cup Unsweetened Almond Milk
  • 2 tbsp Vanilla Extract
  • 4 tsp Sugar in the Raw
  • 2 tbsp Smart Balance Light and Buttery Spread

Wash and slice peach in even pieces (I leave the peel on, you may peel if you prefer).  Place 1 tbsp Smart Balance in two individual crock bowls and microwave on 50% for 1 minute or until just melted.  Evenly spread the sliced peaches into both bowls.  In another bowl whisk together the flour and sugar with a fork.  Then add almond milk and vanilla and whisk lightly until moist (lumps are ok!).  Pour mixture over the fruit evenly between the two bowls.  Add blackberries to top of each one. Preheat oven to 350 degrees and add both crock bowls on a cookie sheet on middle rack.  Back for 25-30 minutes or until batter Browns and the fruit starts to bubble.  For crunchier cobbler use fresh peaches.  For a softer cobbler wait until peaches have ripened completely.  Close your eyes and pretend you are in Georgia!

(p.s. I topped mine with 2 tbsp fat free whipped topping for zero extra points)
