Three ingredients. Ok four if you count the water. When I say we can do this I’m serious. We. Can. Do. This.
Nana has made this newest delight two weeks in a row. I’m a firm believer that three times is a charm so I will be advocating that we need this again. Soon.
Last week it was orange fingerling carrots. This week she used a Tri color baby carrot mix she found at our local Kroger. After she put three bags in her cart, the young lady who had been watching her scooted in close enough to make eye contact. If you’ve met Nana you know that’s all it takes. Fifteen minutes and a lesson in carrot history later this woman was either armed with the best information she received that day, or at least had a really fun story to tell about the tiny vegan she encountered that fateful trip to the grocery.
Knowing Nana like I know Nana, I did a little research to make sure she wasn’t filling heads with faux carrot facts. According to www.carrotmuseum.com though she was pretty darn close!
“Brief Carrot History and Timeline
The cultivated carrot is one of the most important root vegetables grown in temperate regions of the world. It was derived from the wild carrot, which has whitish/ivory coloured roots. The most popular, orange rooted carrot, is derived from yellow rooted domestic varieties. Early writings in classical Greek and Roman times refer to edible white roots, but these may have also been parsnips, or both. There are white rooted carrots in existence today, often used as animal feed or a novelty crop.
The earliest vegetable definitely known to be a carrot dates from the 10th century in Persia and Asia Minor and would have been quite unlike the orange rooted carrot of today. It is considered that Carrots were originally purple or white with a thin root, then a mutant occurred which removed the purple pigmentation resulting in a new race of yellow carrots, from which orange carrots were subsequently developed”. So apparently we frequently munch on mutant rabbit food…oh well they are delicious.
Five Below Club: Glazed Carrots – 1 Weight Watchers Smart Point per serving (4 servings)
Ingredients:
- 1 bag small or fingerling carrots
- 1 Tbsp light margarine
- 2 tsp light brown sugar
- 1/4 cup water
Add carrots and water to a skillet and heat to medium high. Cover with a lid slightly tilted or loose aluminum foil. Steam cook for 15 minutes stirring several times. Check one carrot with a fork to see they are almost tender. If not, replace the lid or foil and continue to steam for five more minutes. When the carrots are just getting tender add the margarine and light brown sugar. Continue to cook uncovered for 3-5 minutes tossing the carrots in the margarine sugar mixture. Remove from heat and allow to sit for just a few minutes. Give the carrots and glaze one final toss before serving and wait for the Wows!
