Granny Green’s Fried Apples – 5 Weight Watchers Smart Points (1PPV)

Due to popular demand here is my version of my grandmothers fried apples recipe.  Who knew she would be in such high demand?

When I posted my breakfast this morning I was flooded with the most questions I have ever had about any single meal.  What are fried apples?  Is there a recipe for fried apples?  I grew up next to an orchard and I’ve never heard of fried apples.  One even mentioned fried apples from a can…ummm no!  Unless you live in Cracker Barrel country then you just need to spend the 20 minutes and make these for yourself.  Trust me, I’ve been eating these since I can remember and they are worth it!

Speaking of Cracker Barrel, my combo this morning would rival one of my favorite combos at that quaint and yummy establishment. A good ole Cracker Barrel biscuit with some of their fried apples is pretty dang good.  But that’s 12 Smart Points (8PPV) of good. My version is only 8 Smart Points.  That means technically I could eat almost 2…

Granny Green’s Fried Apples – 5 Weight Watchers Smart Points (1 PPV)

Ingredients:

  • 2 medium to large apples (one any firm red variety and one Granny Smith)
  • 1/4 cup water
  • 1 tbsp Smart Balance Light spread (for a vegan version use Earth Balance and add 2 more Smart Points or 1 more PPV)
  • 1 tbsp Sugar in the Raw
  • 1 tsp ground cinnamon
  • 10-20 cinnamon imperials (optional to taste)
  • Non stick spray

Core and slice both apples thinly. Spray a large non stick skillet with butter flavored non stick spray.  Place apples in one layer in pan and spray other side.  Heat for 5 minutes on medium and add half of the 1/4 cup of water.  Cover loosely with aluminum foil and cook another 5 minutes.


Remove foil, stir and add the remaining water, smart balance and sugar.  Stir again and re-cover loosely with foil


Halfway there!  After about 5 minutes remove foil and sprinkle with ground cinnamon.  If you are using the cinnamon imperials add them now.  Stir, making sure any thicker slices are moved to the center of the heat.  Reduce temp to low and allow to finish simmering for the final 5 minutes.  Stir liberally and serve immediately as a side dish, over pork of any kind or as a topping for any bread.  Also makes a great filling (head’s up, check out tomorrow’s recipe).  As shown below with a Trader Joe’s pita for only 8 Smart Points (4PPV)!
