This is one of those moments in life where you need juuuuust a little something else on your plate but everything you have on hand is 3 Smart Points before you even do anything with it. I try to keep my work week breakfasts under 6 SP but sometimes I need a little somethin’ somethin’…know what I mean?
Last week hubby was home like 6 days in a row (I know, I know…it’s a miracle!) and I had an opportunity to control his lunches for five of those six days. He loves him some white bread but I hate throwing away half the loaf when he gets that call and has to leave again. It is inevitable, if I buy a bunch of perishable food thinking he is in town for a few days then he has to leave town. I’m sure there is a metaphysical phenomenon name for that but let’s get back to warm cinnamon and sugar. He will eat as many bananas rolled up in a peanut butter filled tortilla as I can pack for him so I grabbed a pack of Trader Joe’s Reduced Carb tortillas for us both. He can have his roll ups, I can eat the rest if he gets called out to a jobsite. Tada. Win win. Add the cinnamon sugar. Win win WIN!
Cinnamon Sugar Wedges – 1 WW Smart Point / 1 Points Plus
Ingredients:
- 1 Trader Joe’s Reduced Carb Tortilla (or other 1 point tortilla like Ole Extreme Wellness)
- 1/2 tsp coconut sugar (I use Trader Joe’s Organic Coconut Sugar) or 1/ 2 tsp Truvia Baking Blend
- 1/2 tsp ground cinnamon
- Non stick spray (I use Trader Joe’s Coconut spray)
Preheat oven to 350. Spray tortilla with non stick spray. Sprinkle as evenly as possible with the sugar and cinnamon. Bake for 10 minutes or until the tortilla starts to bubble up. Cut into 4 pieces with a pizza cutter (much easier than a knife) and serve immediately. Yum yum yummy!
