According to Wikipedia “Cinco de Mayo (pronounced: [ˈsiŋko ðe ˈmaʝo]; Spanish for “May 5th”, or literally, “Five of May”) is a celebration held on May 5. The date is observed to commemorate the Mexican Army’s unlikely victory over French forces at the Battle of Puebla on May 5, 1862, under the leadership of General Ignacio Zaragoza.[1][2] In the United States, Cinco de Mayo is sometimes mistaken to be Mexico’s Independence Day—the most important national holiday in Mexico—which is celebrated on September 16.[1][3]”
And you know what victory over the French means? That’s right. Margaritas. I’m sure if I had a some free time tonight to do more research I would find some really significant correlation between this 1862 victory and tequila, but tonight I’m too busy icing cookies.
For as long as I can remember my husband has referred to this lesser holiday as Fiftho de Mayo. I don’t know why I find it so amusing but I look forward to it every year.
I’m not a drinker and I try my best to only chew my WW Smart Points, but I do love the flavor of margaritas. And this Fiftho de Mayo I wanted something made with limes. And I was craving something sweet. And I had this nice big box of Pizzelle cookies that someone in my Facebook support group had introduced me to. Fiftho de Win…O
Cinco de Mayo Margarita Iced Pizzelle – 5 Weight Watchers Smart Points
Ingredients:
- 2 Pizzelle Italian Waffle Cookies
- 1 Tbsp powdered sugar
- 1 Tbsp fat free half & half
- 1/2 tsp lime juice
- 1/2 tsp lime zest
- 1 tsp Smart Balance Light (or other light spread)
- 1 tsp Sugar Free White Chocolate Jell-O (powder, not prepared!)
- Pinch of coarse salt
I have little tiny glass bowls that you see on cooking shows holding prepared ingredients so we don’t have to watch all that tedious measuring. I mean come on, who has time to watch them sort, sift and pour when they can dirty up 12 more dishes? I use mine for making tiny concoctions like this icing!
Place the tsp of Smart Balance in the glass bowl and microwave on 50% for 30 seconds (or until melted). Mix in the powdered sugar and Jell-O powder with a small fork until all lumps are gone. Set 1/2 the lime zest and the coarse salt to the side. Add the other 1/2 of the lime zest and remaining ingredients and continue blending with the fork until smooth. I am quite sure than my pastry chef sister will say we should use a whisk but I’ve never seen one quite that tiny. So fork it is.
Place the 2 Pizzelle on a flat surface and drizzle equal portions of the limey-ness onto each one starting at the center and working your way out. Sprinkle the remaining lime zest and the coarse salt evenly on top. Let set for approximately 5 minutes and then toast your celebratory confections with a friend. Happy Fifth-O de Mayo indeed!
