After my Trader Joe’s trip last week (be sure to check out the extra credit portion of Chat #211 to see the full haul!) I’ve got lots of new and delicious ideas.
You all know I’ve been working hard to make sure I eat lunch during workdays, so when I found my favorite Hearty Minestrone soup I knew I’d be set. To really turn this soup into a meal I added some feta cheese and made some DIY low-point croutons to go with it.
If you’re looking for a quick, easy lunch that will leave you feeling satisfied and won’t break your points budget for the day I’d highly recommend this one.

Ciabatta Croutons

1 SP Blue, Green, and Purple
Ingredients
- 1 Trader Joe's Artisan Bread Ciabatta Roll
- 1 tbsp Bragg Nutritional Yeast
- Sprtiz of nonstick spray
- DAK's Italian Blast (or your favorite seasoning)
Instructions
- Cut your ciabatta roll into bite-sized pieces
- Place all of those pieces into your Simple Living Products air fryer's basket
- Spritz with nonstick spray (Evo Sprayers are great for this)
- Sprinkle on nutritional yeast and DAK's seasoning
- Cook in your air fryer at 360 degrees for 5-6 minutes
