- Michele makes PB2 every morning with water but she tried olive oil and said it tastes just like peanut butter!
- Haley really took one for the team and got her #fitfat from blackened salmon with mango salsa and asparagus made in her air fryer
- Sherry used avocado on her low point toast instead of butter
- Vickie has been using avocado daily and canola oil in her vegetables. She says, “Who knew healthy tasted so good?”
- Alicia subbed 2 tbsp of avocado on her turkey sandwich instead of mayo
- Teresa uses olive oil and nutritional yeast in her green beans
- Debra tossed green beans and tomatoes in olive oil and roasted them instead of microwaving them. Um, yes please!

This Week’s Topic: Spring into Summer
No one could have predicted the spring we just had. Things changed so fast that first month that I barely remember it. In every aspect of my life I groped around looking for a new normal only to have it change again. From the sound of the news today we aren’t done yet. Our state is (hopefully) entering Phase 3 later this week.
I don’t know about you, but I’m ready to enter Phase ME.

Extra Credit: Replace These 4 Appliances with Your Air Fryer
- Microwave: Save tons of counter space by using your air fryer to warm Hot Pockets, egg rolls, leftover pizza, and so much more!
- Toaster: Use your air fryer to make toast, eggos, and pastries
- Toaster Oven: Instead of digging out the toaster oven, use your air fryer to make nachos, grilled cheese, chicken nuggets, fish sticks, and more
- Oven: Sure you can use your air fryer for chicken, steak, and roasted veggies, but how about staying cool this summer by leaving your oven off and baking potatoes? Or better yet, a peach cobbler!
