I’m not gonna lie, I was skeptical. As much as I love swapping ingredients, #bulkitup, and all that WW jazz I thought the idea of cauliflower rice tasting anything like fried rice was a stretch at best.
But ermagersh…Can I just say this IS FRIED RICE? I mean I seriously doubt anyone who didn’t know you subbed cauliflower would even guess. Do you see my face? I’m not kidding.
I have eaten this four times in the last 10 days. And I have serious aspirations to make it again this week. BTW, this did freeze well in the Meal Prep Haven containers but I only let it stay in the freezer a few days before it was calling to me. Again. I’ll try for 30 days in the freezer this next batch and let you know how it goes.
Cauliflower Fried Rice

Yield 6 1/2 cup servings
So easy, so versatile...I could eat this every day! Great with Bragg Liquid Aminos as a "soy sauce" and I added some hot Chinese mustard for a pa-pow at work last week!
1 Blue / 1 Green / 1 Purple Smart Point on WW My Way!
Ingredients
- 16 oz bag of riced cauliflower (or rice your own!)
- 1 egg + 1/4 cup egg whites
- 1/4 cup diced onions
- 1/2 cup mixed frozen veggies (like peas and carrots)
- 1 Tbsp minced garlic
- 1 scallion
- 3 Tbsp Bragg Liquid Aminos (or soy sauce)
- 1 Tbsp toasted sesame oil
Instructions
- Heat oil to medium in a large skillet and add garlic. Saute for one minute
- Add frozen vegetables, onions and only the white portion of the scallions and continue to saute for 3-4 minutes or until soft
- In the meantime add egg and egg whites to a microwave safe dish, whisk together until blended with a fork and microwave on high for one minute. Break up with the fork, stir and microwave again for 30 seconds to a minute until cooked through. "Scramble" with a fork and set aside
- Increase heat to medium high and add the cauliflower rice and Bragg Liquid Aminos, stir and cook for 5 - 6 minutes
- Add egg scramble, green portion of diced scallions, mix one more time and serve!
