While we were on vacation at Disney I had the opportunity to enjoy more than one dish as a Caprese, and being me of course I thought “egg mug!” My husband rolled his eyes. He rolled his eyes because a) everything I see becomes an egg mug quest and b) Caprese salad is the only thing my father’s very young girlfriend from Poland could actually “cook” when she used to visit. No matter the event, no matter the holiday, no matter the rest of the menu, Lucy made Caprese. And we were all expected to fawn over its complex European flavors followed with an ooooh and an ahhhhh. She was young. She was pretty. A cook she was not. It’s basically three ingredients people…

But they are three delicious ingredients. And I did really enjoy it. And admittedly I never made it myself because it was kinda her thing. But she’s not visiting any more…and I loved what I had at Disney…and it’s super easy…
Caprese Egg Mug – 4 Weight Watchers Smart Points
Ingredients:
- 1 fresh egg
- 1/8 cup egg whites
- ½ ounce fresh mozzarella cheese
- ½ of one Roma tomato sliced thin
- 3 fresh basil leaves
- 1 tsp Balsamic vinegar (do me a favor and spend a little more money and get a good one. Not ridiculous, just a little more…you will thank me and a little goes a LONG way)
- Olive oil non stick spray
Spray mug, muffin cooker or crock bowl with non stick spray. Add everything but the egg, egg whites and balsamic to the bowl and cook in microwave on high for 30 seconds
Crack open egg and add to bowl along with egg whites, stirring gently but evenly into the other ingredients.
Return to microwave for 2 minutes on high. PLEASE NOTE! The added moisture in this one may require extra time so continue microwaving if necessary in 30 second increments on high until the entire thing is “set” all the way through (no runny bits if you gently lift with a fork and check). If you have a low wattage microwave or the mixture is still “loose” continue to microwave in 20 second increments until everything is firm but not hard. Drizzle with the balsamic . Let sit for one minute before trying to remove from bowl to move to bread or plate. The egg “muffin” should slide out easily. Use your imagination, these are a delicious and quick filling breakfast…enjoy!
