Butternut Squash is best eaten as soon as it is cooked but can be reheated in the air fryer to keep its crispness. I don’t recommend the microwave but sometimes you gotta do what you gotta do right?

Refrigerate for up to 3 days. Freezing is not recommended.

Sweet and Spicy Butternut Squash featuring Miller's Mild Banana Pepper Sauce

Yield 4 servings

Ingredients

Ingredients:

  • 1 medium Butternut Squash peeled, seeds removed and cut into cubes. Or approximately 2 cups of already cubed squash
  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp Cary’s Sugar Free or similar maple flavored syrup
  • 1 Tbsp Miller’s Mild Banana Pepper Sauce (or more to taste)
  • Pinch of Himalayan Pink Sea Salt
  • ¼ cup Light Feta Cheese, crumbled (I use President or Trader Joe’s brand)
  • Parsley to garnish

Instructions

Directions:

Mix all ingredients except the squash cubes, feta cheese and garnish.

Lightly mix with a fork or whisk

Toss cubes in the mixture

For Air Fryer:

Spread in an even layer in the air fryer basket or tray

Bake on 400 degrees for 20 minutes and lightly toss/shake about half way through

When ready top with feta cheese and garnish, serve immediately

For Oven:

Spread in an even layer on a parchment paper lined cookie sheet

Bake on 425 degrees for 40-45 minutes and lightly toss/shake about half way through

When ready top with feta cheese and garnish, serve immediately

Notes

1 Point per ½ cup serving
