I used to skip breakfast because I thought it was boring. Now I wouldn’t miss it for anything. If there has been one joy during this journaling journey so far it has been this, my rediscovery of the most important meal of the day. So many egg ideas so little time!
Canadian Bacon and Eggs – 5PPV
Ingredients:
- 1/2 cup Baby Porta Bella Mushrooms
- 1 farm fresh egg
- Babybel Light Mini broken into pieces
- 1/4 cup black beans rinsed
- 2 slices uncured Canadian Bacon
- Fresh ground black pepper
- Blackberries and strawberries on the side
Spray a non stick skillet and add sliced mushrooms, sautee 5-6 minutes over medium heat stirring twice. Add egg, breaking yolk and let cook 2 minutes or until egg starts to set. Add rinsed black beans, Canadian bacon, Baby Bel and continue cooking for 2 more minutes or until cheese is melted, flipping once. Add fresh ground pepper and at least let it cool enough to not burn yourself before you devour!
