Yesterday on the drive home I had some crazy fall recipe ideas bouncing around in my head.  It was still 90 degrees where I live but everywhere I looked it was “happy 1st day of fall”, “pumpkin spice season is back!”, I even saw a “happy autumnal equinox” post somewhere.  Even if it’s still hot outside people start to get a little sweater and hot cocoa crazy when the first day of autumn arrives.

I knew these recipe ideas were going to be a problem because of the ingredients I had convinced myself to purchase.  Limiting the size/amount was going to be difficult…staying out of them nearly impossible.  First things first, as soon as I got home I decided to strap on my backpack and walking shoes and hike up to the store rather than drive.  That was 2.4 miles round trip and I was good and sweaty so I didn’t immediately break into the bag of yummy treats I had just picked up.  I spent the second half of the round trip psyching myself up for the first recipe to be something simple.  Something that had zero point power foods.  Mentally I took inventory of my backpack contents and came up with a blooming good idea.  A blooming apple snickers good idea.

Blooming Snickers Apple – 5 Weight Watchers Smart Points (3 Points plus)

Ingredients:

  • 1 very firm medium sized apple (I had a honey crisp but now that I’m sitting here quietly I realize a granny smith may be heavenly!)
  • 2 each Snickers minis (and I mean minis, not snack size, not trust yourself to cut off enough of a bar…minis)
  • 2 tbsp Lite Whipped Topping (check your brand to make sure 2 tbsp are still 1 Smart Point or 0 Points Plus for the brand you use)
  • 1 tbsp water

Take one apple and light score it twice around the apple, about a third of the way down and then 2/3 of the way down.  Using an apple corer remove the center.  Then slice about half way down from the top (not all the way through!) 4 to 6 times turning each time.  Do not try to separate the apple.  Place the scored apple in a microwave safe crock bowl or dish and add about a tablespoon of water.  Microwave on high for 2 minutes.  This will save you about 30-40 minutes of baking time.  Remove the bowl and poke two unwrapped Snickers minis into the cored hole in center.  Cover loosely with aluminum foil and place in preheated over for 40 minutes on 325.  VERY CAREFULLY remove with a pot holder when done…the dish and the apple will be hot!  Gently press on the apple with a spoon or fork and it will “blossom”.  Add the lite whipped cream and try not to burn your lips when you devour this aromatic delight!

  1. You could probably lower the points if you use sugar free syrup and 1 T of lite whip cream.. It is only 2 points then
