Air fryers truly are one of the most versatile tools in our kitchen. If you’ve been on the fence about getting one, do yourself a favor and start picking yours out now!

In the extra credit from Chat #179, we talked about all of the different appliances that can be replaced by an air fryer! I use my Simple Living air fryer for just about everything imaginable and today we’re going to put it to the test by baking a peach cobbler in our air fryer.

Air Fryer Peach Cobbler

Yield 2 Servings

Makes 2 servings total:WW My Way Green - 5 SP for one serving (1/2 of the cobbler) or 3 SP for 1/2 serving (1/4 of the cobbler)

Ingredients

  • 2 fresh peaches, sliced
  • ½  cup nonfat plain Greek yogurt
  • ½ cup self-rising flour
  • 1 tbsp Land O Lakes light butter with canola oil
  • 2 tsp Truvia baking blend
  • 2 tsp coconut milk 
  • Halo Top ice cream (I recommend the Peaches and Cream flavor)

Instructions

  1. Spread sliced peaches across the bottom of a round nonstick cake pan (I used the one that came with my Simple Living Air Fryer and it’s approximately 7” wide)
  2. Mix greek yogurt and flour together like you would biscuit dough
  3. Top peaches with small, evenly spaced dollops of Greek yogurt and flour
  4. In a separate container, melt butter and mix with Truvia baking blend and coconut milk. Combine well.
  5. Pour your sauce over the top of your peaches and dough (Make sure to get plenty in the places you put dough
  6. Bake on 360 for 15 minutes
  7. Serve with a scoop of Halo Top ice cream
