Our daughter’s birthday is December 30th so she has always had to compete for celebration between Christmas and New Years. When she was little we had an opportunity to take her to Disney World for her birthday and it was truly magical. My husband will kill me for telling you this, he says we talk about it way too much and have created a flurry of other guests visiting that same week now. Right, like we have that kind of influence on the travel industry. During that first trip we decided one meal should be at he famous Rainforest Cafe…I mean our daughter was like 5 so how could we skip that? Since that time we have been to RC in Downtown Disney Orlando, Animal Kingdom Orlando, Nashville Opry Mills Mall, Disneyland in Anaheim, Las Vegas, Ontario Mills Mall California, and even London. As in London, England…across the pond.
One of my favorites after a long hot day at the parks was their signature Napa Slaw. The first and only time I had experienced Jicama and I kept going back for more. It didn’t matter what we ordered, Awesome Appetizers, Mojo Bones, Brave New World Pizza….I always begged for a side order of Napa Slaw.
That is until one fateful day about 3 years ago when they discontinued it. My beloved slaw. It broke my heart. I’m not even sure what I ordered that first time, life would never be the same. Until now….my friend Bobbie found a mock recipe on the Internet and I tweaked it to my taste. I have to admit, it’s pretty close and I’m a pretty happy girl.
Rainforest Slaw (10 servings) – 4 Weight Watchers Smart Points per serving
Ingredients:
- 1 cup frozen kernel corn
- 1 large jicama
- 1 green pepper finely chopped or julienned
- 1 red pepper finely chopped or julienned
- 1 yellow pepper finely chopped or julienned
- 4 carrots finely shredded or julienned
- 1/3 cup red onion chopped
- 1/3 cup Trader Joe’s California Golden Raisins
- 1 cucumber diced
- 1 cup red cabbage finely shredded
- 2/3 cup Rice Wine Vinegar
- 1/3 cup Sugar in the Raw (or other granulated sugar)
- 1/8 cup Smart Balance oil
- Fresh ground pepper to taste
- Fresh ground sea salt to taste
***Update 09/2015: one of my genius friends realized that ingredients 2 – 6 are in the Trader Joe’s Healthy 8 Veggie Mix….sooo guess who isn’t chopping veggies for this any more?***
Instructions:
Wash/scrub the Jicama thoroughly and peel. Rinse again. Using a very sharp knife or a mandolin finely chop/shred or julienne the Jicama.
Using a very sharp knife or a mandolin finely chop/shred or julienne the Rest of the vegetable with the exception of the corn and toss together with the jicama.
Add the golden raisins, corn kernels, pepper and salt and toss
Mix the oil, sugar and rice wine vinegar together and whisk for 15 to 20 seconds. Pour mixture over the veggies and toss again until everything is evenly coated. May be eaten immediately but the vinegar/sugar combo is amazing if you let it sit overnight. Attempt to divide into 10 equal servings if you can avoid just sitting down with a big spoon and eating it all. Enjoy!

In your Rainforest Slaw, you show a jimaca, and yet you don’t list a jimaca among the ingredients. Can you please clarify?

You prob. Already know this, but Trader Joes has the ingredients ALL chopped up and ready in their produce department really really inexpensive. It’s In a see thru container.

how much jicama do you put in there? Recipe sounds very intriguing!
One large jicama I thinly sliced mine but I may have to invest in the mandoline since there is so much slicing. But it was sooo worth it!
Smart balance oil?? Not sure I have ever seen that, what type of oil is it. Hopefully I can get it in Canada. What to substitute if not? Thanks
